The three-course tea ceremony (三道茶, sān dào chá) is a special tradition of the Bai minority in Yunnan. Each cup has a symbolic meaning:
The first cup is bitter. It represents youth: hard work, learning, difficult beginnings. Only those who first experience bitterness can achieve success later.
The second cup is sweet. It stands for adulthood: success, family, happiness. After effort and diligence comes the reward.
The third cup is first sweet, then slightly bitter, then pleasant. It symbolizes old age: one looks back, remembers joys and hardships. Everything is part of life, and one learns to be content and calm.
Originally, this ritual was shared at festivals and special occasions; today, it is an expression of hospitality and cultural pride. In Shaxi, a historic trading town on the Tea Horse Road, this ceremony is still lovingly maintained.
The hosts combine tea, singing, and instrumental music—often interspersed with anecdotes or family stories. This interplay makes the ceremony an atmospheric, lively event that goes far beyond a simple tea tasting.
